Beta-Carotene Overload!

Here’s a quick and easy juicing recipe that’s absolutely delicious and only takes 3 ingredients:

Ingredients:

  • 3 carrots
  • 1 large navel orange
  • 4 oz water

Why it’s good for you:
This simple juice is chock full of antioxidants.  You get your fill of beta-carotene (a form of vitamin A), vitamin C, vitamin B, vitamin E.  It’s believed that drinking carrot juice promotes good prenatal health, eyesight, bones and teeth, liver and nails, skin and hair as well as help in cancer prevention.  Orange juice protects against inflammation, improves your diastolic blood pressure, and decreases bad cholesterol.  All in all, it’s a great juice for a runner like myself =).

This juice is amazingly delicious and simple.  However, remember like many things it’s good in moderation!  4 oz of this juice is about 100 calories…your typical glass at home is 16 oz.  That’s almost 400 calories!  I live by measuring my foods.  Also, there is a high sugar content (though it is a simple sugar).  I cut back the sugar by adding water to the mix which will not only reduce the amount of sugar and calories in my drink, but also allow for me to make the juice last (i.e. make 2 servings).  I’m not a huge fan of carrot juice but when you add the sweetness of orange to it, it’s simply amazing.  I’ve also made this juice by substituting the orange with 3 clementines.  This kicked up the sweetness factor for the juice.  

Unfortunately I don’t have any photos of the juice but it’s definitely more visually pleasing than the spinach grape juice I featured last week =).
